So, the ingredients:
- Small not ripened or even green tomatoes 10-12 pcs;
- Juice of half of the lemon (if not juicy, which happens often enough at the beginning of summer - the juice of a whole lemon);
- Salt - a tablespoon with a hill;
- Sugar - 2 sl. tablespoons;
- 3 garlic teeth;
- A bundle of cilantro and dill, if desired, add other greenery, many people love celery with greens.
Wash the greens and put on a paper napkin, we repeat the same with tomatoes and garlic. It is important to fold everything dry!
Choose a form for cutting tomato. Green tastes tastier in large cubes, and red immature slices. Mature fruits can be pierced with a toothpick in several places.
We cut the greens and grind in a meat grinder with a large mesh or in a blender, but not by a homogeneous mass. Through the garlic, pass the garlic.
It remains to be put in the dishes. We recommend a package, as it leaves clean dishes, prevents contact with metal and ceramics, as well as convenient during transportation. If desired, you can pickle in a bank, but with a plastic lid, or loved by many - in an oak barrel.

Simple recipe for cold salting of little salted tomato
We will need:
- 3 kg of ripe tomato (just those that did not approach the first recipe);
- 1 tbsp. spoon of vinegar 9%;
- 3 tbsp. tablespoons of salt;
- 1 tbsp. a spoonful of sugar;
- 1 head of garlic;
- List of horseradish and dill with an umbrella;
- On a sheet of currants and cherries.
Rinse the tomatoes and all the ingredients. We pierce with a toothpick near the stalk. We wash out the pan and wipe the dry. To the bottom: horseradish leaves, dill umbrella and currant leaves and cherries. We spread the tomatoes tightly to each other, but without pressing them with stalks to the top. After the first layer, gradually add the garlic finely chopped.
Now evenly water with vinegar and pour with bottled or boiled cold water. We wait 3-5 days and put on the table! By the way, the same method is great for salt in a barrel, which is installed in the cellar for the whole winter! But in this case, they will already be salty.
Sauer tomatoes quickly
So, on a 10-liter pan, we will need a converted tomatoes:
- Dill branch with an umbrella;
- One horseradish spine;
- One spine of parsley;
- Garlic head;
- Pepper with peas and black 10 pcs., Bay leaf 5 pcs .;
- Pod of bitter pepper.
Everything is mine and we begin to fold - a layer of tomato layer of seasoning and on the top of the leaves of horseradish, another layer of tomato, seasonings and dill, and so on to the very top of the pan. Now it remains to pour a brine - on a liter of water 2 tbsp. tablespoons of salt. We cover with gauze and put in a cool place (cellar or bottom of the refrigerator). The recipe for an excellent snack says - tasty and juicy in the evening, and a healing brine in the morning. Whatever it was, in most cases all generations gather at the table, including children who are certainly not needed. We offer to cook sauer barrel tomatoes without barrel.
We will need a bucket of 6 liters (if you have more, consider in proportion):
- Tomatoes (for filling out);
- Salting broom (horseradish, dill, parsley roots, pasternaka, celery, cherry and currant leaves, and other herbs that to anyone like);
- Garlic head;
- Additionally: pepper with peas of different varieties, cloves, bay leaf, salt (necessarily ordinary, neoidized).
It is very important to choose the right tomato variety. Classic is the usual cream, but there may be other fleshy varieties. Multi -colored tomatoes look especially good on the table.
My tomatoes under cold water, remove the tails, and discard the spoiled ones.
The green broom must also be washed and then cut into pieces of 5-6 cm in size. Mix so that the composition is as homogeneous as possible.
We wash out the bucket, we’ll pierce especially well after the detergent. We cover the bottom with greens and seasonings, begin to lay out the layer behind the tomato layer. Each layer must at least a little with greens.
Now boil water and fall asleep with salt. For 3 liters of water - 100 grams of salt. If the bucket is plastic - pour a warm solution so that the bucket does not burst, if the metal or wood - you can pour almost boiling water.

Recipe for little salted, sauer tomatoes in a barrel
If you want - argue, you want - no, but the most delicious sauer tomatoes are in an oak barrel. And by the way, its acquisition is very worthwhile if you have a basement or cellar. If you are confused by the cost, you should remember our grandmothers, their oak barrel served for decades. The main thing is to get a barrel in the spring, wash thoroughly and put in the sun to dry. Then we put in a dry room before salting this year.
So, we need:
- A hard, intact tomato, different varieties can be in one barrel, but green and ripe in different barrels;
- 2 kg of Bulgarian pepper;
- On a 50 liter barrel 3 salting broom;
- Sheets of currant cherries, laurels;
- Pepper peas white, fragrant, black, red;
- Pod of bitter pepper;
- Salt.
We wash the vegetables, cut the stalks, remove the glued and damaged. We pour the barrel with boiling water and put a third of the greens to the bottom so that it covers the bottom of the barrel. We lay the tomatoes, grinding with herbs and periodically the box of bell pepper (it gives special taste and piquancy to tomatoes). We fill the barrel and pour the brine from the calculation of 30 grams of salt per liter of water, pre -boil, cool and fill. If the brine was not enough, do not be discouraged, prepare more brine and add to full filling.
Cover with clean gauze and lid. Leave for a week in the cellar, after which every 3-4 days you will need to remove mold from gauze. To do this, you will need several cuts to change each time on a clean section.

We need a large plastic basin, but it is better to contain a container, since it is easy to transport it to nature, and who wants to have dinner in the house in the summer?
Ingredients:
- 1 kg of fleshy tomato;
- Bunch of dill with parsley;
- Pepper peas multi -colored 5 peas of all colors;
- 3 garlic teeth;
- 1 tbsp. a spoonful of salt.
Wash the tomatoes, cut into 4 parts, put in the dishes. Wash and cut the greens, squeeze the garlic through the garlic. Add salt, mix carefully thoroughly, close tightly and leave on the windowsill (in the warmest place in the house) for 2 hours. Serve to the table!

Sharp tomatoes, or as we still love to call them in Korean, adore many, but remember, such a dish is not recommended for children.
Recipe for 1.5 liter capacity:
- 1 kg of tomato;
- 2 pcs. Bulgarian pepper;
- 1 PC. chili pepper or other acute;
- Garlic head;
- Dill, parsley, basil, mint.
And for the marinade:
- 2 tbsp. tablespoons 9% vinegar;
- 50 ml. vegetable oil;
- 50 g Sugar;
- 1 tbsp. a spoonful of salt.
Wash all the vegetables, chop the bell pepper, pass the sharp through a meat grinder with herbs, mix thoroughly.
Prepare the marinade: connect the digging, vegetable oil, salt and sugar. Mix.
Cut the tomatoes into 2 parts and put in a container. We fall asleep with spices and fill with the marinade. Carefully close the jar or container and turn the lid down, after 2 hours it returns to the usual position. After 8 hours, put in the refrigerator, after a day you can serve to the table!

We will need:
- 3 kg of tomato;
- 5 kg of white cabbage;
- 1 medium -sized carrots;
- 2 liters of water;
- 2 tbsp. tablespoons of sugar;
- 4 tbsp. tablespoons of salt.
Shink the cabbage, rub the carrots.
Tomatoes - remove the hats and take out the insides. We fill it with cabbage. We’ll trim a little, but so as not to damage the tomato. We put in a container.
Now mix all the other ingredients and bring them to a boil. Pour the container and cover with a lid. Let us cool and put in a cool place for 2 days. We shift the tomatoes, filter the brine and pour it again. You can immediately put on the table, or you can store in the refrigerator for up to 14 days.
Small -salted tomatoes with basil and garlic: recipe
Ingredients:
- 2 kg. Tomato;
- 2 liters of water;
- 150 gr. (bundle) basil;
- 5 tbsp. a spoonful of salt without a slide;
- Bulb;
- 3 garlic teeth;
- Bay leaf and pepper peppers.
Grind garlic, onions, basil. We cut the tomato so that it can be filled. Filling: peppers, garlic, basil. Start and put in a container. Pour the brine and put the plate on top so to cover the entire surface, put the weights at the top. We leave three days in the kitchen, and then rearrange in the refrigerator or cellar.
Small-salted tomatoes in Georgian
We will need:
- 1 kg of tomato;
- A bunch of cinzes;
- 6 cloves of garlic;
- 5 peas of pepper;
- 5 h. Pinch of acute red pepper;
- Salt and sugar.
Small tomatoes and dry. We make cross -shaped incisions. Pour boiling water and wait 2-3 minutes. Gently clean the tomato from the skin.
Cut the greens.
Cut the pepper.
Cut the garlic plates.
Wash and sterilize the jar. At the bottom of the jars we put pepper with peas, a third of the cilantro, and a quarter of garlic.

Seed: In a liter of cold water, dissolve 2 tablespoons of table salts. Pour tomatoes and put a plate on top and install a weighting agent. In cool time for 3 days.
After 3 days you can eat!
Small -salted tomatoes in its own juice
We propose to make little salted tomatoes in a barrel, and all that remains is to salute for the winter.
Ingredients:
- 10 kg of tomatoes;
- 5 kg of salt;
- Leaves of cherries and currants;
- Dry mustard;
- Spices to taste.
We twist a quarter of the tomato through a meat grinder, cut fruits, soft and ribs will go there well.
We lay the bottom of the barrel with leaves of greens and cover a series of tomatoes. Sprinkle with salt and mustard. The next row of leaves, tomato, salt and mustard. And so to the very top.
Filling 1/3 of the barrels, watering with tomato, we also repeat, filling 2/3 to the top.
Now we cover with a lid with a hole and add the juice to the top. We do not close the lid, let it be transferred for two weeks. After that, we can eat, as well as close the lid and leave for the whole winter.
Small -salted tomatoes in mineral water
Another version of daily small -salted tomatoes that have a slight taste and pleasant aroma.
We lay large tomatoes in a pan, previously cutting off the hat. In each tomato we insert a half of the clove of garlic, and a half -spoon of salt.
After the tomatoes are laid on top, cover the leaves of cherries and currants, pepper and after that you can lay the second layer of tomato, but the third layer is no longer recommended so as not to damage the lower fruits.
Pour the mineral water into the pan and boil (1 liter), at the end add 2 tablespoons of vinegar and fill the tomatoes. Let us cool and put in the refrigerator for a day.
Small -salted tomatoes with honey
Delicious tomatoes are obtained with honey and garlic, for cooking we need:
- 5 kg of tomato of the ladies' fingers;
- 1 sl. a spoonful of salt;
- 1 head of garlic;
- 3 peas of pepper;
- 2 pcs of cloves;
- 2 tbsp. tablespoons of honey;
- 1 pcs dill umbrella;
- Lavra and currant sheets.
My tomatoes are cleaned and cleaned of the stalks, we put off the damaged ones. We clean the garlic and cut into several parts. In each tomato we immerse a piece of garlic. We put everything in jars, divide the spices into the number of cans, fall asleep and pour boiling water.
We wait 3-5 minutes, drain the water into the pan, bring to a boil and fill it again. We wipe and let cool in warmth.
