The word "yogurt" was and is controversial in our days. Some prove that the word is invariably connected with the "yoga" in the sense that the product is good for health. Another version is the name of a woman who once came up with yogurt as a dish for dinner for a holiday, she was called Yoko.
This sour -milk product has its own name in every people and the country and therefore should be borne from each language. For example, the word “yogurt” itself is customary to use in Europe, the eastern countries call it a katyk (Gatyk) or Matsoni (Matsun, Mecorad).
Which country is considered the birthplace of yogurt: the history of origin
Surprisingly, for the first time, humanity spoke about the creation of yogurt for the first time for a very long time and at the moment the world has known many legends and stories of its creation. One of them, for example, is the legend of the Turks, that they wanted to appease their guardian angels that this is why they created yogurt. This product was so good, tasty and useful that it was not for nothing that it began to be called “white air” (precisely for the benefit and even the need for life).
Another, more realistic legend, says that yogurt turned out quite by accident and its creators were ordinary nomads. They, moving from place to place, wore milk (valuable food product) in leather bags. It was not sacred into these containers to penetrate the bacteria, but the conditions of constant movement, which shaved and mixed the milk, as well as the heat that heated the containers led to the process of banking and obtaining yogurt.
Interesting: in ancient letters, one case was recorded when Francois the Second, the king of France, was very seriously ill and not one medicine could help him, the court doctor tried to experience yogurt on him. Only when he began to eat yogurt regularly, he was able to recover. Since then, a herd of special goats has been held at the court, which always gave milk to prepare fresh yogurt.
E. Mercnikov (Nobel Prize owner, French scientist) made an observation, noting that in Bulgarian villages all residents regularly drink yogurt and other sour milk products. Mechnikov believed that it was this feature that allows people not only to extend their lives, but also to improve their health. In this case, the “secret of youth” was the main bacteria called Lactobacillus Bulgaricus.
The first company that showed yogurt to the world was called Danon. I. Karasso founded it. It was he who developed the trade in this fermented milk product first throughout Europe, and then around the world (the 40s of the last century). The yogurt that everyone can observe in our time is a product that has been improved by specialists on the Balkan Peninsula. Special fermented milk bacteria were bred here.
Currently, everyone can make yogurt using special leashes sold in a store (bacteria). The fermentation method is thermal, the milk must first be brought to 37-38 degrees and pour bacteria, cover and leave in heat for 10-12 hours.
